The injera platter, often called beyaynetu, is the centrepiece of East African cuisine. At Rimyya Friendship Bar And Restaurant, we ferment our injera batter for days to achieve its signature spongy texture and gentle sour flavour, the perfect base for soaking up rich, spiced stews.
